When race cars in ALMS(and most other professional motorsports) look for brakes, they turn to AP Racing. Check out the article "Ultimate GT Showdown" in Road and Track Magazine. Notice the factory brake setups, and then the brake setups on the race cars. See if you can see some J-Hooks under those big, expensive, centerlock wheels.
